Blueberry Power Muffins

Hi! It's been a while....
I have been cooking and creating, but life has been so busy that I haven't been documenting anything.

I've been on a smoothie kick recently after my roommate was given not one, but two, Ninja Bullet blenders. We have so many bags of frozen fruits in our freezer, I thought I would put some of them to a different use. These muffins have extra protein from the oats and Greek Yogurt.

You will need:
2 Cups of Whole Wheat Flour
1 cup of Oats
2/3 cups of sugar
1 tsp of baking powder
1 tsp of baking soda
1/2 tsp of salt
1.5 cups of plain Greek yogurt
2 tbsp of honey
2 large eggs, beaten
4 tbsp of unsalted butter
1 tsp of vanilla extract
1 cup of blueberries (fresh or frozen)

Preheat oven to 350 and grease a muffin tin. I used my mini muffin tin for these (makes about 32 muffins). Combine all dry ingredients in a bowl. Combine all wet ingredients in another bowl, and carefully mix the two mixture together. Fold in blueberries. Put into the muffin tin and bake for 20 minutes. Place on a cooling rack and enjoy!!!

Summer Bucket List: Make Pimento Cheese from Scratch


Amazing and healthier! I made this version with Greek Yogurt. It tasted almost the same as the kind I buy at the store!

What you need:
1 cup plain Greek yogurt
1 dollop of Mayo
4 oz diced Pimentos with juices
4 cups shredded cheddar and Colby jack mix
A few sprinkles of Cayenne Pepper
Salt and Pepper, for taste

Mix all the ingredients together in a large bowl. Add more cheese if desired. Refrigerate until ready to serve. Enjoy with your favorite chips!

Chick Pea Salad

I have had a can of Garbonzo Beans in my pantry forever, and I wanted to put it to use.  I came across this recipe online and thought it looked great!! It has all the veggies that I will actually eat (minus red onions, which were NOT added to my salad). I pretty much will eat anything that contains black olives and feta, mmmmmm.  This was so light and fresh, and healthy!! Check it out.



You will need:
One 15 oz can of chick peas, drained and rinsed
1/2 cup of sliced black olives
One small roma tomato, diced
1/2 cup of cucumber, diced
1/2 cup red bell pepper, diced
Two or three fresh basil leaves, cut into small pieces
1/2 cup of feta cheese
1/2 cup of red onion, diced (IF YOU DARE)

splash of lemon juice
splash of red wine vinegar
salt and pepper
oregano
one large spoonful of plain greek yogurt

Combine all ingredients in a large bowl and stir it together until the dressing is consistent. Enjoy!

**This would be great for a yummy healthy lunch. It would also be awesome as a topper on some yummy grilled chicken.
